#112 Philippine's Menudo




Beef Menudo is a Philippine stew dish, as most stews, it is simple and  easy to make. It tastes good when eaten warm after cooking and even better the next day. This is our home recipe for beef menudo, it's always a great meal for us.
Yield: Serves 4

BEEF MENUDO


Ingredients:

1 pound beef stew meat, cut into 1-inch cubes
1 tablespoon olive oil
3 garlic clove, minced
1 small onion, chopped
2 cups of beef broth
1 can (8 oz). tomato sauce
1/2 cup peeled potatoes, diced
1/2 cup peeled carrots, diced
1/4 cup green peas
1/4 cup raisins
1 bay leaf
2 tablespoon fresh parsley
salt and pepper to taste


Directions:
  1. In a large skillet, heat the oil. Add the garlic until brown, then add the onions until soft. Add the meat and brown all sides. Add the broth, bay leaf and the tomato sauce. Let boil then simmer until meat is tender.
  2. Add the potatoes, carrots, green peas and carrots and let cook until vegetables are done.  If needed,  add 1 tablespoon of water at a time until you obtain the consistency of the sauce that you like.
  3. Sprinkle fresh parsley, serve immediately over hot cooked rice or pasta. Salt and pepper to taste.
